How To Make the World’s Most Fashionable Baked Potato

Over the past decade, the restaurant has become a must for fashion’s elite during Paris Fashion Week, with a list of customers that includes Rihanna, Kanye West, Carine Roitfeld, and Bella Hadid—just to name a few. 

During the height of Fashion Week, the cafe is a sight for sore eyes, with editors taking multiple vodka shots in the corner to chart-topping musicians dangling cigarettes inside. Caviar Kaspia is the type of place where you’re likely to stand in line for the bathroom behind Raf Simons.

On the top of their menu lies their most popular dish, a simple yet carefully prepared baked potato, served with fresh cream and a secret ancestral ingredient. The best part? It’s all topped off with the world’s finest caviar. Subtle yet decadent, filling yet fashion-forward, the potato is the stuff of a hungry Fashion Week-goer’s dreams. So naturally, we spoke to Caviar Kaspia’s owner, Ramon Mac-Crohon, who talked to us through the key steps to assembling their most sought-after potato.

Step 1 : Bake large Samba potatoes from Brittany in the oven. (They must be Samba potatoes from Brittany.)

Step 2: Remove the potato from the skin, and save the skin. Mix the potato with salt, pepper, sour cream, chives, and an ancestral secret ingredient. (No, we won’t tell you what it is, no matter how many times you ask.)

Step 3: Gently put the potato back into the skin. Then put it back into the oven at a high temperature for a short time to get a slight crust.

Step 4: Put a large (very large) dollop of Kaspia’s Caviar on top, and serve with fresh cream on the side. Careful: this must be done with high aesthetic appeal, lest the potato be ruined.

Step 5: Before eating, put the fresh cream in the heart of the potato. If home is where the heart is, then the heart is most certainly where the cream is.

Step 6: Post a picture of the potato on Instagram, but please: let the celebrities eat and drink in peace. No one wants to be the person asking Kanye for a selfie at Kaspia—the ultimate fashion week faux pas.
